So, I haven't blogged about Sneaky Chef for a while. Sorry - life has been more exciting than that lately I guess.
It is still in production at our house in about 3 meals a week. I try to make one of the variations of pancakes every weekend. My favorite is the "monkey pancakes" that include banana's, orange puree (sweet potatoes/carrots), and I sprinkle in a few choc. chips for the kiddos. They gobble them up and I know they started the day great with fruit, veggies, and fiber (whole wheat flour mixed in with reg flour). Oh - and they are super yummy!
During the week I make mostly my own recipe's, rather than pre-set ones from the book now. I'm more comfortable with the puree's that I've figured out how to hide them, and which ones to use in my own recipes that my family is already familiar with. It is still hit or miss what Ainsley will eat, but at least I know that when she does eat it, it has good stuff in it and we are making every bit count. ;-)
If you want to start small I would recommend just one thing - hide stuff in your tomato sauce! It seems to be one of the easiest places to hide extra boosts without anyone knowing or changing the taste. You can use it on pasta, pizza sauce, cook meatballs in it, pour it over meatloaf...the list goes on. I use simple canned tomato sauce from Costco...heat it a bit and mix in either the orange puree (carrots/sweet potatoes) or the white puree (cauliflower/zucchini), and usually can hid a little oat bran in there as well for some extra fiber.
