Hot Soup - Cold Day.

I'm posting this mainly for my mom and my Aunt Carla as I think they'll love this recipe. But also - it has been strangely cold here by AZ standards and hot soup just sounded great for dinner.

I got this recipe from a girl friend of mine and she is a great cook - so I trust her recipes automatically - besides it sounded too easy not to try!

Enchilada Soup (Kristy Gahn)
1 large can of enchilada sauce (Macayos brand was great)
2 cans cream of chicken soup (I used nearly FF kind and it was still great)
1 can diced tomatoes (I used the kind with jalapeno's in it)
1 can chicken broth
1 7 oz can mild green chiles
3 crushed garlic cloves
1 tsp. each Oregano and Cumin
You can add jalapenos if you want to kick it up some (I did).
2 chicken breasts (you can put in frozen) or if you make later in the day use rotisserie.

Put it all in the crock on low for 8 hours. When done, use forks to pull the chicken apart. You can add sour cream, cheese, crushed chips or whatever you want before serving. Or just eat it with tortillas.
I added brown rice for the last 15 minutes of cooking and we crushed tortilla chips in ours. YUMM!
